BBQ Gumbo recipe
Barbeque and gumbo, two staple cooking dishes from the south, are a natural pair. This soup is sweet, smoky, and addictive.
Ingredients:
½ cup butter
1/3 cup flour
1 cup chopped onions
1 cup chopped green bell peppers
½ cup chopped celery
2 cloves garlic, crushed
2 pounds barbeque meat scraps
1 (28-ounce) can diced tomatoes
3 cups chicken broth
1 cup sliced okra
1 teaspoon salt
½ teaspoon black pepper
¼ cup chopped fresh thyme
1 tablespoon hot sauce
2 cups cooked white rice
Directions:
1. Melt butter in a large pot over medium heat. Add flour and stir to break down clumps; cook 10 minutes, until light golden, stirring continuously.
2. Add onions, bell peppers, and celery; cook 10 minutes, until softened. Add garlic and cook 30 seconds.
3. Add meat scraps, tomatoes, and broth; bring to a boil, cover, and simmer 30 minutes, until meat is very soft.
4. Add okra, salt, pepper, and thyme; cook until mixture thickens, about 15 minutes. Add hot sauce and serve over rice.
